Ingredients 2 large eggplants, sliced into 1/2-inch rounds 1 cup all-purpose flour 4 eggs, beaten 2 cups seasoned bread crumbs 1/2 cup grated parmesan cheese 2 cups shredded mozzarella cheese Vegetable oil for frying Salt and pepper to taste   For the Marinara Sauce: 1 can (28 oz) crushed tomatoes 1/2 onion, finely chopped 2 garlic cloves, minced 1/4 cup olive oil 1/4 teaspoon red pepper flakes 1 teaspoon dried basil Salt and pepper to taste Instructions Preheat the oven to 375°F (190°C).
