Ingredients

  • 3 large eggs

Instructions

In a bowl, whisk the eggs until well beaten. Season with salt and pepper.

Add the chopped spinach to the skillet and sauté until wilted, about 2 minutes.
Pour the beaten eggs over the spinach and let it cook undisturbed for a minute or two until the edges start to set.
Gently lift the edges of the omelette with a spatula and tilt the skillet to allow the uncooked egg mixture to flow to the edges.
Sprinkle the crumbled feta cheese and chopped parsley evenly over one half of the omelette.
Fold the other half of the omelette over the filling and cook for another minute until the cheese melts and the omelette is cooked through.
While the omelette is cooking, toast the slices of whole wheat bread until golden brown.
Remove the omelette from the skillet and transfer it to a plate. Cut it in half if desired.
