Classic Rice Pudding with Cinnamon and Nutmeg

This classic rice pudding recipe is a perfect dessert that is easy to make and satisfying to eat. It is a creamy and sweet treat with a hint of cinnamon and nutmeg flavors that you will love.

Ingredients

  • 1/2 cup white rice
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/2 teaspoon vanilla extract

Instructions

Rinse the rice in a fine mesh strainer and add it to a medium saucepan with 1 cup of water. Bring the rice to a boil over high heat, reduce heat to low, cover and simmer for 18-20 minutes until tender.

Add milk, sugar, cinnamon, nutmeg, and salt to the cooked rice and stir. Bring the mixture to a simmer over medium-low heat, stirring occasionally. Cook until the mixture thickens and the rice is creamy, about 20-25 minutes.

In a small bowl, beat the egg and vanilla extract together. Gradually add 1/2 cup of the hot rice mixture to the egg mixture, whisking constantly to avoid curdling. Pour the egg mixture back into the saucepan and stir until well combined.

Cook for an additional 2-3 minutes, stirring constantly until the mixture thickens. Remove the pan from the heat and let the pudding cool slightly before serving.
