Dairy-Free Coconut Milk Ice Cream with Toasted Coconut Flakes

Indulge in a creamy, dairy-free dessert with our Coconut Milk Ice Cream recipe. Toasted coconut flakes add a delicious crunch and tropical flavor to this refreshing treat that’s perfect for a warm summer day.


  • 2 cans full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt
  • 1/2 cup unsweetened shredded coconut, toasted


In a medium saucepan, whisk together the coconut milk, sugar, vanilla extract, and salt. Heat over medium-high heat until the mixture comes to a simmer.

Reduce heat to low and let the mixture simmer for 10 minutes, stirring occasionally.

Remove the saucepan from heat and let the mixture cool to room temperature.

Once cooled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

In the last few minutes of churning, add in the toasted coconut flakes and let the ice cream machine incorporate them into the ice cream.

Transfer the ice cream to a freezer-safe container and freeze until firm, about 4 hours.
