Creamed Corn with Jalapeno and Cilantro

Ingredients

  • 4 cups fresh corn kernels (about 6-8 ears of corn)
  • 2 tablespoons unsalted butter
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Instructions

In a large skillet, melt the butter over medium heat. Add the minced jalapeno pepper and sauté for 1-2 minutes, until fragrant.

Add the corn kernels to the skillet and stir to combine with the jalapeno and butter.

Pour in the heavy cream and stir to combine. Reduce the heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally.

Once the corn is tender and the cream has thickened, remove the skillet from the heat and stir in the chopped cilantro. Season with salt and pepper to taste.
