Creamy Vanilla Bean Ice Cream with Waffle Cone Pieces

This delicious creamy vanilla bean ice cream is the perfect frozen treat to cool down on a hot day. The added crunch from the waffle cone pieces makes it a unique and flavorful dessert that everyone will love.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 vanilla bean, split and scraped
  • 3/4 cup granulated sugar
  • 4 egg yolks
  • 4 waffle cones, crushed into small pieces

Instructions

In a medium saucepan, combine the heavy cream, whole milk, and scraped vanilla bean. Cook over medium heat until the mixture comes to a simmer.

In a separate bowl, whisk together the sugar and egg yolks until pale yellow.

Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.

Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

Strain the mixture through a fine-mesh sieve into a clean bowl.

Chill the mixture in the refrigerator for at least 2 hours or until completely cooled.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.

During the last few minutes of churning, add the crushed waffle cone pieces to the ice cream mixture and continue churning until well combined.

Transfer the ice cream to a freezer-safe container and freeze until firm, at least 4 hours or overnight.
