Ingredients

  • 2 cups whole wheat flour
  • 1/2 cup old-fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup chopped walnuts
  • 1 tsp vanilla extract

Instructions

Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, whisk together the whole wheat flour, oats, baking powder, baking soda, and salt.

In a separate bowl, mix together the honey, vegetable oil, mashed bananas, eggs, chopped walnuts, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined.

Scoop the batter into the muffin tin, filling each cup about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Let the muffins cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
