BBQ Pulled Pork Sliders with Coleslaw

These BBQ pulled pork sliders are the ultimate crowd-pleaser. Slow-cooked pork is smothered in a tangy BBQ sauce and served on soft slider buns with a crunchy coleslaw on top.

Ingredients

2 lbs boneless pork shoulder
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp brown sugar
Salt and pepper, to taste
1 cup BBQ sauce
1/2 cup apple cider vinegar
1/4 cup honey
12 slider buns
Coleslaw mix (shredded cabbage and carrots)
1/2 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp honey
Salt and pepper, to taste

Instructions

Preheat the oven to 325°F (165°C).

In a small bowl, mix together the smoked paprika, garlic powder, onion powder, brown sugar, salt, and pepper.

Rub the spice mixture all over the pork shoulder and place it in a large roasting pan.

In a separate bowl, whisk together the BBQ sauce, apple cider vinegar, and honey. Pour the sauce over the pork shoulder.

Cover the roasting pan with foil and bake for 3-4 hours, or until the pork is tender and falls apart easily.

Remove the pork from the oven and let it cool slightly. Use two forks to shred the pork into bite-sized pieces.

In a large bowl, mix together the coleslaw mix, mayonnaise, apple cider vinegar, honey, salt, and pepper.

To assemble the sliders, place a spoonful of the pulled pork on each bun, followed by a spoonful of coleslaw.

Serve the sliders immediately, with any remaining coleslaw on the side.
