  • 4 Mahi-Mahi fillets (6-8 oz each)
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste
  • 2 ripe mangoes, peeled and diced
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil


Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1-2 minutes, until fragrant.

Add the spinach to the skillet and toss to coat with the garlic and oil. Cook for 2-3 minutes, or until the spinach has wilted and is bright green.

Season with salt and black pepper to taste.

Remove the skillet from the heat and stir in the lemon zest and juice. Toss to combine.

Serve the sautéed spinach with garlic and lemon immediately.
