Ingredients

For the Salad:

  • 1 cup quinoa, rinsed and drained
  • 1 3/4 cups water
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped scallions
  • Salt and black pepper, to taste

For the Lime Vinaigrette:

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

Instructions

For the Salad:

In a medium saucepan, bring the quinoa and water to a boil.

Reduce the heat to low and simmer, covered, for 15-20 minutes, or until the water is absorbed and the quinoa is tender.

Fluff the quinoa with a fork and let it cool to room temperature.

In a large bowl, combine the cooked quinoa, black beans, red bell pepper, cilantro, and scallions.

Season the salad with salt and black pepper, to taste.

For the Lime Vinaigrette:

In a small bowl, whisk together the lime juice, olive oil, honey, garlic, salt, and black pepper.

Pour the vinaigrette over the salad and toss to coat.

Serve the salad chilled or at room temperature.
