Ingredients

  • 1 1/2 cups heavy cream
  • 1 1/2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon loose-leaf black tea
  • 1 cinnamon stick
  • 5 cardamom pods, crushed
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2 1/2 teaspoons unflavored gelatin
  • 1/4 cup cold water
  • Caramel sauce, for serving

Instructions

In a large saucepan, combine heavy cream, whole milk, sugar, black tea, cinnamon stick, cardamom pods, ginger, cloves, and nutmeg. Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer.

Remove the pan from the heat and let it steep for 10-15 minutes. Strain the mixture through a fine-mesh sieve and discard the solids.

In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom.

Reheat the strained mixture over low heat and add the gelatin mixture. Stir until the gelatin dissolves completely.
Divide the mixture evenly among six 4-ounce ramekins or custard cups. Chill the panna cotta in the refrigerator until set, at least 4 hours or overnight.

To serve, run a knife around the edge of each ramekin and invert the panna cotta onto a serving plate. Drizzle with caramel sauce.
