  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 8 ounces sausage (such as Italian sausage), sliced
  • 1 cup dried lentils, rinsed
  • 4 cups chicken or vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 2 cups chopped kale
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)


In a large pot, heat the olive oil over medium heat.
Add the diced onion and minced garlic to the pot and sauté until fragrant and translucent.
Add the sliced sausage to the pot and cook until browned.
Stir in the dried lentils, chicken or vegetable broth, and diced tomatoes. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the lentils are tender.
Stir in the chopped kale and dried thyme. Simmer for an additional 5 minutes until the kale is wilted.
Season the soup with salt and pepper to taste.
