Steak and Potatoes with Garlic Butter and Thyme

This classic steak and potatoes dish is elevated with a flavorful garlic butter and thyme sauce. Perfectly seared steak and crispy roasted potatoes make for a satisfying and delicious meal.

Ingredients

  • 2 ribeye steaks, about 1 inch thick
  • 4 medium Yukon Gold potatoes, diced
  • 4 cloves garlic, minced
  • 4 tbsp butter, softened
  • 2 tbsp fresh thyme leaves, chopped
  • Salt and pepper, to taste
  • Olive oil

Instructions

Preheat the oven to 400°F (200°C).

Place the diced potatoes on a baking sheet and drizzle with olive oil. Season with salt and pepper and toss to coat. Roast in the oven for 20-25 minutes, or until crispy and golden brown.

While the potatoes are roasting, season the steaks generously with salt and pepper.

Heat a large skillet over medium-high heat. Add a drizzle of olive oil to the pan and add the steaks. Sear for 3-4 minutes on each side, or until cooked to your desired level of doneness.

In a small bowl, mix together the minced garlic, softened butter, and chopped thyme to make the garlic butter sauce.

Remove the steaks from the skillet and let them rest for a few minutes.

While the steaks are resting, spread the garlic butter sauce over the top of each steak.

Serve the steak and potatoes on a platter, garnished with additional fresh thyme leaves.
