Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Jamaican jerk seasoning
  • Salt and black pepper, to taste
  • 1 mango, peeled and chopped
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 lime, juiced
  • 1 tablespoon honey
  • 2 cups cooked rice
  • Chopped fresh cilantro, for garnish (optional)

Instructions

Preheat the grill to medium-high heat.

Rub the chicken breasts with olive oil and season them with Jamaican jerk seasoning, salt, and black pepper to taste.

Grill the chicken for 5-7 minutes on each side, or until cooked through.

In a medium bowl, combine the mango, red onion, red bell pepper, jalapeno pepper, lime juice, and honey to make the mango salsa.
