Roasted Rack of Lamb with Rosemary and Garlic

  • 2 racks of lamb, frenched and trimmed
  • 4 cloves of garlic, minced
  • 2 tablespoons of fresh rosemary leaves, chopped
  • 2 tablespoons of olive oil
  • Salt and freshly ground black pepper


Preheat the oven to 400°F (200°C).

In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and black pepper.

Rub the mixture all over the racks of lamb, making sure to coat them evenly.

Place the racks of lamb on a baking sheet and roast in the oven for 20-25 minutes, or until the internal temperature reaches 130-135°F (54-57°C) for medium-rare or 140-145°F (60-63°C) for medium.

Remove the lamb from the oven and let it rest for 5-10 minutes before slicing into individual chops.

Serve hot with your favorite sides, such as roasted potatoes, steamed vegetables, or a fresh salad.
