Ingredients

  • 1 pound sirloin steak, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 pound baby potatoes, quartered
  • Chopped fresh parsley, for garnish (optional)

Instructions

In a large Dutch oven or stockpot, heat the olive oil over medium-high heat.

Add the beef to the pot and cook until browned on all sides, about 5-7 minutes.

Add the onion and garlic to the pot and cook until the onion is translucent, about 2-3 minutes.

Add the beef broth, water, barley, bay leaves, thyme, salt, and pepper to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.

Add the carrots and potatoes to the pot and continue to simmer for an additional 30-40 minutes, or until the vegetables are tender and the beef is cooked through.

Remove the bay leaves from the pot.

Serve the beef and barley stew hot, garnished with chopped fresh parsley if desired.
