Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, chopped
  • 1 cup snow peas
  • 1 can (14 oz) coconut milk
  • 3 tbsp green curry paste
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste

Instructions

Heat the vegetable oil in a large pan over medium-high heat.

Add the onions and sauté for 2-3 minutes until they begin to soften.

Add the green curry paste and stir to combine with the onions.

Add the bell peppers and snow peas and stir to coat in the curry paste.

Pour in the coconut milk and stir to combine.

Add the fish sauce and brown sugar and stir to combine.

Bring the curry to a simmer and cook for 5-7 minutes until the veggies are tender.

Add the shrimp and cook for an additional 3-5 minutes until the shrimp are pink and cooked through.

Stir in the chopped basil and season with salt and pepper to taste.
