    • 2 tablespoons Dijon mustard
    • 1 tablespoon whole-grain mustard
    • 1 tablespoon apple cider vinegar
    • 2 cloves garlic, minced
    • 1/2 teaspoon smoked paprika
    • Chopped fresh parsley, for garnish (optional)

Instructions

Preheat the oven to 400°F.

Season the chicken thighs with salt and black pepper to taste.

In a large bowl, whisk together the olive oil, honey, Dijon mustard, whole-grain mustard, apple cider vinegar, garlic, and smoked paprika.

Add the chicken thighs to the bowl and toss to coat in the honey mustard glaze.

Place the chicken thighs skin-side up in a baking dish.

Arrange the Brussels sprouts around the chicken in the baking dish.

Pour any remaining honey mustard glaze over the chicken and Brussels sprouts.

Roast for 35-40 minutes, or until the chicken is cooked through and the Brussels sprouts are tender.
