Ingredients

  • 1 large ripe mango, peeled and thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 cup roasted cashews
  • 2 cups mixed greens
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon fish sauce
  • 1 garlic clove, minced

Instructions

In a large bowl, combine the sliced mango, red onion, and red bell pepper.
In a small bowl, whisk together the cilantro lime dressing by combining the lime juice, honey, fish sauce, minced garlic, and red pepper flakes.
Season the dressing with salt and pepper to taste.
