Ingredients

  • 1 cup wild rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 2 tablespoons chopped parsley

Instructions

Rinse the wild rice in a fine mesh strainer and drain well.

In a medium saucepan, combine the wild rice and broth and bring to a boil.

Reduce the heat to low and simmer, covered, for 45-50 minutes, or until the rice is tender and the liquid is absorbed.

In a large skillet, heat the olive oil over medium heat.

Add the onion and garlic and sauté until softened and translucent, about 5-7 minutes.

Add the cooked wild rice to the skillet and stir to combine.

Add the thyme, salt, and black pepper and stir to combine.

Stir in the dried cranberries and chopped pecans.

Cook for an additional 2-3 minutes, or until heated through.

Garnish with chopped parsley before serving.
