This recipe takes classic mac and cheese to the next level by adding spicy buffalo chicken. Creamy and cheesy with a kick of heat, this dish is perfect for a comforting dinner or party appetizer.
Cook the macaroni according to the package directions. Drain and set aside.
In a separate bowl, combine the shredded chicken and hot sauce. Set aside.
Preheat the oven to 350°F and grease a 9×13 inch baking dish.
In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for 1-2 minutes, stirring constantly.
Gradually whisk in the milk and continue to whisk until the sauce is smooth and thickened, about 5 minutes.
Stir in the cheddar cheese and blue cheese until melted and smooth.
Add the cooked macaroni and chicken mixture to the saucepan, stirring to combine.
Transfer the mixture to the prepared baking dish.
In a small bowl, mix together the breadcrumbs with a pinch of salt and pepper. Sprinkle the breadcrumb mixture over the top of the macaroni and cheese.
Bake for 20-25 minutes, or until the top is golden brown and crispy.
